Building deck before glassing hull

It seems that everything I read about building and glassing a strip kayak, says to glass the hull and then procede to building the deck. I am in the process of building a Georgian Bay kayak and have just completed stripping the hull. I want to just flip the boat over and start on the deck. Once the deck is stripped I figured on sanding everything at once and then glassing the hull and deck one at a time and then joining them. Am I missing something? Why doesn't anyone do it this way.
