Planing sheers on Ches 17'

TGIF. I'm getting ready to plane the sheer clamps on my CLC Ches 17'. I've heard this is a crucial step in order to have the deck fit nicely. Any words of wisdom before I start planing down? Thanks!

ps-anyone out there paddling a Ches 18? what's it like? down the line i'm looking into boats that would accept some of the taller and heavier members of my family. any suggestions regarding larger kayak models?

pps-it's cold here in NH!
