Two good resources are the epoxy book from System Three Epoxies - 206-782-7976, and the book from WEST "Fiberglass Boat Repair & Maintenance". both are soft bound booklets. West - 517-684-1374. West also has a video. The book Canoecraft is excellent book on glassing a canoe. Also from the Wooden bookstore.
Also "How to Fiberglass Boats" by Ken Hankinson - available from the Wood boat bookstore (Wooden boat Magazine) This book covers Polyester Resin use as well as epoxy with extensive coverage on glass fiber materials etc.
There's no one book covering your particular problems and concerns on glassing a kayak. If you read this site often, you know how diferently opinionated builders are on the subject (especially about pre-wetting the wood) etc. You have to read a vast array of material, learn what you can and experiment on your own projects. Also call the manufaturers and talk to them about your concerns - they're all very helpful.
Lay up some glass on scrap plywood and experiment. I learned a lot by doing that.
