This is not as hard as it sounds. Keep in mind that you don't want to put a curved surface on the top of the sheer clamps. You do want to plane the tops to an angle tangent to the curve of the deck at the nail line. If anything, you could leave a slight gap on the inside edge where no one can see it.

If I recall correctly, at the middle of the boat you will be taking wood off the outside edges of the sheer clamps and at the very ends you will take wood off the inside edges. So while the angle of the planed surface is constantly changing (a rolling bevel) the planed surface is always flat from left to right.
