Wood is just as good. Use either a fixed board like a half height bulkhead with the individual pedals hinged at the top, pedals hinged at the bottom or the system I use/manufacture, pedals with the hinge about level with the ankle. Rudder lines self-adjust and you get something fixed to brace against. It is possible to modify the sliding pedals (fix them) and fit "flappers" to the top. Drop the position of the slides but don't drill new holes in the kayak.
