I'm not sure what size is good, but mine are about 6 inches wide. Probably a little too wide, but I can move the seat around a little and still have the plates in touch with my cheeks 8^).
I didn't make mine exactly like in the book. Mine are attached to the deck and hull and have a slight bend to follow the curvature of the coaming
