I built an S&G, and I really like paddling it. It was quick & easy to build, but it's only 5 panel. It is not as beautiful as a strip kayak. You oughta consider just skipping the S&G--with 12 panels, you're not going to see much difference between the strip and S&G in time, labor, or ease of construction. Just go for TWO strip kayaks that you'll be _really_ proud of--you can do it!
