A foam roller is very good at applying a thin even coat of epoxy. A squeegee is better at applying a thick coat and filling the weave. I don't think that anything is wrong with your technique if there is still some weave showing after 4 coats with a roller.
You do want to have the epoxy smooth before applying varnish.
