I've never used a kayak that has a day hatch, but I like the idea of having a space for stuff that I can get at while paddling (without worrying about flooding half the boat if I capsize). Right now I tend to have that sort of stuff either in the cockpit, where I can't get at it easily, or under the bungees on the deck, where it increases my profile to the wind and causes additional spray.
