I have had some success with teak and epoxy. If you fully encapsulate the wood, water penetration should not be a problem, but it is hard to permenantly coat piece like the track.
I have an ash track which is over 10 years old. It is just varnished if I remember correctly. Softwood is no good, but ash, oak, teak and mahogany should all work. Mahogany may be the best choice.
