I haven't used West System epoxies, but I'm sure the gumminess on your sample piece was due to amine blush. That varnish may work on your boat. Did you wash it well with soap & water before varnishing it? Good Thing you tried a sample first! Can you imagine having to scrape all that gummy crap off your entire boat!

Look closely at your hull. Is it cloudy because there are very tiny bubbles in the epoxy? You may have had some outgassing when you were fiberglassing. If so, there's not much you can do about it, but it won't hurt the performance of your boat.
