Kevlar is at its most effective when it is in tension. In other words, on a strip-built panel which is being bent the kevlar covered side is convex. On a kayak this is usually the inside of the boat.
A kevlar "grunge" strip on the bow and stern at the keel will provide good abrasion protection, but covering the outside with Kevlar alone would not make the strongest boat.
