I prefer wire. In building my son’s boat I found it was nice to be able untwist a line of wires when I need to make an adjustment. Also unless you have a special tool to tighten the plastic ties, it is probably easier to do fine adjustment of the tension with wire.
Finally I had a problem with the alignment of two panels lining up. I was able to take a longer piece of wire and cross diagonally between 2 sets of holes and pull the pieces into alignment by twisting the wire. I doubt you could do that with a plastic tie.
