Hello, In not picking out the bords myself my greater concern isn't the knots so much as how warped the wood might be. I can rip around the knots but a badly twisted board is going to fight you every inch of the way and make it very hard to get a uniform thickness on your strips. Also when you don't pick out the boards yourself it is hard to get the flat sawn grain you need to end up with quarter sawn strips.
