I used a method much like Larry C. on my Pygmy kayaks. The results were excellent. The kerfs can be kept small so the finished hatch to deck gaps are small. It takes a little more time but this whole kayak building process is rather slow. The idea of making a perfect power saw cut on an almost finshed boat was too much for me.
