You need a real 3/4" by 1" for the sheer clamps. You'll end up planing most of the extra 1/4" off the sheer clamp at the boat ends but you need the full 1" thickness in the middle.

That said, let me tell you how I fixed my brain-cramp decision on the sheer clamp. Being a "genius" I decided to knock the corner off the sheer clamp and save myself some planing. When I installed the deck beam I discovered the curve did not match my bevel. I cut off too much wood! Solution - Glue more wood on. I got some thin strips of pine about 6' long and epoxied/clamped them on top of the short sheer clamp. Glue hardened and problem solved.

Maybe you could get some leftover scraps from somewhere. I'd try a local mill or large home center. They would probably give you the strips for free if you explain what you are building to the manager. Just make sure to get straight grained wood.
