Hi Dan--
One other thought: if you cut your scarfs fairly accurately, you should be able to sand down the epoxy so that only the wood on either side of the joint is visible and very little of the epoxy in the joint should be seen.
After you've sanded it, you could lightly coat the joint with a thin stripe of fresh epoxy to see how much it will show through the finish coat. (make sure to lightly sand this epoxy stripe before you glass so that the epoxy will adhere)
