I am currently building the Patuxent 19.5 and gave some deep thought to the dilemma your in, prior to purchasing the kit. I wanted speed and clean lines.

I settled on a bulkheads with inspection ports. You can order these directly from CLC. They will send you scrap plywood, you cut it out to spec, cut your hole for the port and drop it in.

I just installed them tonight. Took about two hours and was very easy. The inspection ports are 6.5 inches wide and screw in and out for a watertight seal. VERY LOW MAINTENANCE.

That move cost me maybe 2.5 pounds, which was worth the trade off. The bags weight is nearly that.
