I've got very limited experience, so take this with a grain of salt:
I find a greenland style paddle easier for touring. Because of the narrow blade on the inuit paddle though, I find bracing and sculling easier with a euro style paddle. Note "easier" should not be confused with "unable to use the other method"...just easier.
You can make a greenland for just a few bucks. You might also be able to make a Euro cheap as well. Try both for a while and see what you like best.
