I would use a couple of thin coats of epoxy, but not totally fill the weave. You don't want to slip entering or leaving the cockpit and unfilled glass cloth has at least some nonskid properties. Totally filled glass cloth with a couple of coats of varnish has about the same nonskid properties as glare ice. It's even worse when it's wet!
