The only reason I don't do this all the time is because it is fractionally easier to other part of the boat off while glassing one part than it is to shove the plastic/waxed-paper into the sheer joint. Being basically lazy, I jump on any step that saves me a tiny bit of effort. Of course I open myself up to damaging the un-glassed piece when I remove it from the forms, but aside from the time I stepped on it, I have not had any problem when I put it someplace safe.
I do not recommend stepping on a deck when it does not have glass on it. It will break.
With larger boats like a double, I do the wax paper trick.
