The one-part moisture-cure urethanes are about the same level of hazard as spar varnish. Still, any oil-based finish is moderately hazardous, so good ventilation is required. Headaches and dizziness are common symptoms of exposure, so I always use a respirator with charcoal (Organic Vapor) cartridges, the black ones. If you can smell any fumes through the filters, replace them with new ones.

That said, occasional exposure is not likely to cause any long-term damage. It's the guys that have ignored the health and safety advice for years with chronic exposure that get goofy.
