I think that if you have enough time to put on a seal coat you should have enough time to lay on a layer of glass fabric IN that first coat.
Once you get the outside glssed and the hull taken off of the forms you will be spending plenty of time sanding the interior. Compared to the sanding time, laying on the glass and resin is a very fast job.
There is not a big difference between just putting on a sealing coat and putting on a layer of glass fabric with resin. With setup and cleanup time added in, you are comparing a 2 hour job with a 2.5 hour job -- or something in that neighborhood. I'd go with doing the whole thing at once: No separate sealing coat, just lay out the glass fabric and squeegee on the resin.
