Purists would say that architectural coating, even high-build elastomers like Sno-Roof, are not suitable for immersion service. But the reality is that a yak is only in the water for a few hours at a time, so nearly anything will work. Some folks even use cheap mistinted house paint from the hardware store. The average kayak spends less than 1% of its life in the water (unless stored outdoors, which is to be avoided if possible regardless of construction), so your idea probably is a good one. Go forth and experiment!
