Paul, I suspect that you are using a random orbital sander that is taking off too much material. Relax, and see if you can get your hands on a finish sander, the kind that vibrates. This will take off material at the right rate, giving you that finish you so desire. Good luck, and congratulations on finishing your boat. Pete
