I have installed VCP day hatches on some kayaks, and I find that installing them off center works best for access from the cockpit. I also have installed them during building a North Bay. My method is shown on my web site http://pages.cthome.net/bobbycurtis/index.htm

When adding them to a cambered deck, they can be installed right on top of the deck by filling in the space caused by the camber. Epoxy or a silicon based filler can be used.
