If you want to start real easy and cheap, Roy Underhill's book "The Woodwright's Eclectic Workshop" has a skin on frame boad he build with a 9 year old girl in an afternoon. It wood be a good boat for calm water, and a start to kayak building. Most stitch and glue boats are easy to build but fiberglass can be nasty stuff.
