I used wider strips on another design and experienced the problem you are concerned with. My solution was to plane a few strips down to a narrower width where a tighter radius was needed. You will then have a few strips with flat edges glued together, but that should not affect stregth or appearance if well done. Some builders build entire boats out of flat edged strips - it takes longer to plane the rolling bevel needed on the curves, but you may be able to mill your own strips this way and save even more money.
