High gloss is common on exterior brightwork because anything else does not show off beautiful wood to full advantage. Interior finish is another matter. Satin is often used on the interior wood boats, because high gloss in a confined space gets to be too much and comes off gaudy. On my boat, for example, the exterior door and trim for the hatch openings is high gloss. So is one small cabinet. The interior walls, fiddles, and all other wood trim (everything is wood finish, except the ceiling, which is white) is satin. Very elegant. I'd recommend sticking with high gloss for the outside, but consider using satin on the inside, perhaps leaving the coaming or some other accent that appears in the interior bright, for contrast. Another benefit of satin is that it doesn't show scratches and wear as much (often used for interior wood floors on boats, for that reason). And by all means, use Epifanes--simply the best (and although often more expensive, Hamilton Marine--www.hamiltonmarine.com--has far and away the best prices on Epifanes, and the large marine stores usually will meet that price).
