I have two suggestions, in order of preference.

1 -- Buy Nick Schade's excellent book, The Strip-Built Sea Kayak. It has numerous suggestions for building tips and a whole chapter on paddles.

2 -- Shawn Baker makes a nice paddle and describes the process in a clear readable way. Here is the link to his Paddle Building page.
