I was also thinking I was sanding away the epoxy, but found out I wasn't. I used 220 grit paper on my orbital sander and finely realized by touching the surface with my fingers and feeling a glassy surface rather than the wood grain, I hadn't sanded through to the wood. Also, epoxy dust has a quite different consistency than wood dust.
