Since it sounds like you have your heart set on seriously sailing this thing, I would recommend building the CLC sailing rig set-up described in Wooden Boat. The sailing rig provides all the physical properties needed for comfortably sailing, including upwind on both tacks, and it is relatively quick to build.
I have started the construction of the MC-13 sailing set-up as drawn. But after cutting the sail out of an old windsurfing sail and rigging the mast, the kayak just seems to narrow to handel sailing in all but the lightest air.
Since, we doing this for fun and learning something in the process, I encourage you to continue with the effort...
