I think the peaked roof deck may loose a little strength versus the arched deck, the flat panels not being as rigid as the arched ones. I don't think I would score the deck and bend it down the middle. You'll wind up breaking the wood fibers in that area, which will necessitate the glass tape you suggested. Why not cut it all the way through and stitch it back together. It should be possible to bevel the edges accurately and, with matching grain, the joint should be very neat looking
