Pete,

You don't _need_ to add outriggers - look at Klepper (www.klepper.de), a company that has made proven sailing rigs for their kayaks for years (especially the S4 kit). Another tip, in a word: PROA. Check out the link to Craig O'Donnell's page below for some cool info about some really high performance sailing "canoes".
