Look for plans for a double. If you can find one with a large single cockpit, put a single seat in the center. If you have plans for a double with two cockpits, you will have to strip over the two planned cockpits, and cut a new spot closer to the middle of the boat for a single cockpit.

Doubles not only have a greater carrying capacity -- which suits the weight -- but they also tend to be a bit wider, which makes it easier for a large person to fit in. All the engineering work is done for you in the design, all you have to do is shift the seat.

You can also build a large cockpit with two optional tops. One has two cutouts for use as a double, the other has a single cutout for use as a single. If you search the archives here was a Hawaiian (first name Paul, can't remember his last name but I think it started with an M) builder a couple years ago who did this. There were some pictures of his finished boat, and a lengthy discussion as he built it -- from planning through launch. You might get some ideas from that thread.
