That's a lot of questions. A good reference for building stitch'n'glue kayaks is Chris Kulczycki's The Kayak Shop. He explains how to build three different stitch'n'glue kayaks. The Strip Built Sea Kayak by the host of this bulletin board, Nick Schade, is another good reference. Although it is about cedar strip kayaks, much of what he says about fiberglass and epoxy is applicable to stitch'n'glue construction.
