If their really interested in a what you described below, CLC's Mill Creek 16.5 might meet their needs. It's actually a one holer, that fits two or one people. Very stable boat, I don't think you could tip it over. I built mine out of 1/4" luaun with a cedar strip deck. Total cost was about $300. Some pictures of it are on the attached site.
