Peaked sheds better than arched one-piece. IMHO

I think it probably makes more of a difference how the

Right, a higher volume bow will bury less, (your chesapeake probably buries less than the Patuxent) and have less water on deck to deal with, but for breaking waves and the occasional bury, I think peaked decks win hands-down.
