Man, you are really having a tough time. I hope all the problems fade when you're finally on the water. On to the problem...
If it's possible to flex the hatch cover a little, you may be able to epoxy 1 or 2 pre-shaped beams to the underside to help hold the curvature you want. Bend the hatch to the desired curve, and use clamps or straps or tape to keep it there while you shape the beams. Then epoxy them in place. You will need to make it out of hardwood or something that itself won't be flexible.
