Minor Correction:
The Strip Built Sea Kayak is Nick Schade's book. I think Chris Kulczycki's book is called "The Kayak Shop: Three Elegant Wooden Kayaks Anyone Can Build" Obviously the latter is more appropriate for your S&G project.
