My first kayak was a Pygmy built in the livingroom of my apartment. I bought 2 sets of cheap plastic shelving that are made up of 4 shelves separated by plastic tubes for risers. This gave me (8) 2-foot high workbenches that I strung out to support the panels while I spliced them together. I put some scraps of plywood under the joint areas for a more even surface. To work at waist-level later on in the project, I stacked up 2 shelves at either end to use as sawhorses. Not quite as stable, but effective. The boat turned out very nicely anyway...
