I used full sheets of plywood, for a 4x20 workbench. On sawhorses, 2x4 on top of the sawhorses, plywood on top. a few screws to hold it all together. Also put some thin plastic laminate on top of that, made pencil lines easier to see, but the epoxy still stuck ;-(
The 4 foot width made it easier to lay out all the strips for glueing the butt joints, but once you start stitching the strips together, it was a bit of stretch reach from the far side of the workbench. As soon as the hull seams were glued, I moved that to just sawhorses, to make access easier. I kept the workbench since I was building two kayak. It was a big relief to finsh the second kayak and be able to get the huge workbench out of the shop and get some space back. I'd go with a narrower workbench next time, and a couple of smaller work tables for tools and an epoxy mixing station. Maybe a rack against the wall to hold finished strips until ready to stitch them in place.
For the long straight edge for offsets, had some twine stretched the length of the workbench, and tied to some C-clamps to dangle over the edge to provide tension.
