I just finished a Pygmy Osprey. It uses the same construction procedures as the Artic Turn (accept more seams to deal with). I do not see think it is necessary to glue the inside of the other seams. The outside gluing you do is actually a two step process. First you will glue with un-thickened epoxy. This should penetrate the seams and bond the panels where they contact one another. The second step is to filet the seams with thickened epoxy. This should bond the panels at open gaps where they come together. Turning the hull over and gluing the inside of the seams would be somewhat redundant to the first glue step.
Remember also that you will be bonding a layer of fiberglass to both sides of the hull. This will provide more that enough grip to hold the seams together.
The only additional attention you might want to pay to the inside seams is just before you glass the inside. If any of the angles formed by the seams are very sharp you might want to fillet them with thickened epoxy and give the seam a more rounded curve for the glass to work around. But wait until your are ready to glass the inside.
