Considering how many items are made with polyester resin and glass, (and have been made with these materials for many decades) this is unlikely. There is some truth in the opposite, though. Perhaps you got them reversed?
Epoxy is the best choice right now for strip built kayaks, canoes and similar boats because it works well with red cedar and redwood. It also has the desirable property of sealing the wood (one company calls this 'encapsulation') so that water and water vapor cannot penetrate and promote rot.
Polyester resin and damp wood do not make a good combination. As I understand it, the trapped moisture promotes delamination over time.
