Derek,
You are right about what you did wrong. I had the same problem with the mahagany on my Putz, from the outside temp warming my basement a few degrees. It is best if your shop is cooling down as you apply the epoxy, That way it is drawn into the wood.
Mahogany it a fairly light open grained wood, it will be very prone to outgassing because of this.
