The advantage to butt blocks is they give you something to clamp to, i.e. you can clamp both panels to the block to keep them lined up. If you use tape, you will have to secure the panels to a work surface (table?).

Since epoxy is stronger than wood, the tape joints should be just as strong. The raised area caused by the tape is not really an issue. Just leave an extra six inches on each end of the joint, and you can feather it in with a sander. You'll never know it's there when you're done.
