Hi Lee, Yep, got plenty of irons in the fire right now, but now that you mention it, yes, that wouldn't be hard to do.
My existing hatch covers are 1 1/4" oversize. If I were to make them (or at least the front one) recessed, I could even use the existing hatch cover and make a 3/4" or 5/8" lip, which would increase hatch size by 1" each way, which would be noticeable and probably worth the effort (when I can find the time!)
