I think it would work, but the deck is going to be pretty flimsy. You'll need to make sure that after you've attached the deck and hull on the inside, that you sand down the seam on the outside to get a nice, smooth transition between the glassed hull and the unglassed deck. I'm not sure I would risk cracking the deck, though. It's usually a bit of a wrestling match getting the deck into position on the hull, and if you flex just a little too much....
