I haven't done that style of multipaneled deck from scratch yet, but one could easily use the method that I used on my plywood walrus. Run stringers where you want the edges of the panels to be. Lay oversized panels over the stringers and draw the shapes. Cut out. Either glue the panels to the stringers or remove the stringers and stitch up.

If you leave the stringers in, glass the underside of the panels before gluing them on.

I would also lower the sheer on any design that I used this style of deck on. The main advantage of this deck style is that you can make it so you do not bang you paddle on the sheer. The sheer gets lower and slightly narrower without sacrificing practical volume.

I may do this on my next plywood kayak.
