Obviously, you would have prefered to do this in the earliest stages but you should be able to do it now. Plan your cuts carefully. You will brobably have to cut all the panels apart in the area and remove any fillets so you can bend the panels into new angles. You can add new peices of plywood or even solid wood too.
The advantage of building your own boat is that you can experiment.
